Depending on where you’re from, dinner during the holidays can look like many different things. Jerk Island Ribs

Rub ribs with jerk spices, garlic salt, and black pepper. Mix chilli vinegar, cane syrup and lime juice and pour over seasoned ribs. let marinate 2-3 hours. Start hardwood charcoal fire on one side of your grill. Allow the coals to burn until “da black cooks out of em” and they are coated with white ash.

Grill over medium heat for 30-45 minutes, until tender and slightly char. “ifte fire is too hot”, move the ribs off the hot side and cover so they continue to slowly cook and smoke until tender. Once cooked through, you can wrap them in aluminum foil and keep them warm on a grill until you have the rest of the meal ready. They will slowly steam in the foil and continue to cook and get nice and moist.

For 6 Friends

3 racks baby back ribs, approximately 2 lbs. ea.

1/4 c. homemade chilli vinegar (see recipe in Paradise Kitchen)

1/4 c. cane syrup

1/4 c. paradise kitchen jerk spice blend (see recipe in Paradise Kitchen)  or your favorite spicy rub

1 lime, juiced

1 T crushed black pepper

1 T garlic salt

1 T fresh thyme
